Aromas of quince and melliferous flowers accompanies flavors amplitude ; Heather and Tobacco will appear on this capricious Schist plot. This wine doesn't like shells, will perfectly match with fishes, raw milk cheeses, aperitives and intimate evenings.
Terroir : Mountain area in High-Minervois. North/North-West exposed plots. Between 300 and 450m of altitude. Rocky uplands, altitude Schists and clay-limestone.
Grapes : Roussanne, Marsanne.
Vinification : Manual harvest, destimmed, pressed, juice selection, low temperature fermentation (16°C) in stainless steel tank, and 20% in barrels.
Ageing : 4 to 6 months in stainless steel tank and barrels, battonage every day for the barrels.
Tasting : Between gold and thatch, its brilliance announces the vivacity. The nose reveals some material supported by acidity. The mouth is the continuity of the nose, with fresh and spring touches, and a long development. A wine that easily match with fishes and goat cheeses.
