Viognier is not a local grape, mostly because of the lack of water in our area. Our patient agronomic work allow this grape to blossom and root for a long time. The wine is all in lace; Elegant in its shyness, with a light constitution. It gives off delicate flowered aroma, more rarely fruity; This wine prints the vintage, more than others, and gets more complexity with a 2-3 years ageing in bottles. Too spicy sauces, or meals with too violent expressions are forbidden. We will prfer it as an aperitive, out of meal, or with St Jacques shells, loabsters or fresh Dublin bay sprawn from the sea.
Terroir : Mountain area in High-Minervois. The plots are exposed North/North-West. rocky and clay-limestone uplands. Between 300 and 450m altitude.
Grape : Viognier 100%.
Vinification : Manual harvest, destemmed, pressed, little skin-maceration, static settling, 16°C fermentation.
Ageing : Stainless steel tank, 3 or 4 months on lees.
Tasting : Clear yellow, its brilliance announce a stimulating vivacity. Timidly, a few aromas will evoke summer fruits. With its acidic temperament, it will impose itself on spicy - not too much though - fish dishes, and on goat cheeses.
